The cellar of the Untermoserhof is a place of absolute honesty. Within centuries-old walls, deeply rooted in the soil of St. Magdalena, the transformation from grape to wine takes place. It is a functional, clear environment entirely dedicated to the well-being of the wine. Here, greatness becomes possible in small, deliberate steps—guided by precision, intuition, and the necessary humility before a product of nature.

The Art of Waiting

We lay the foundation for our wines with the hand-harvest in the vineyard, but in the cellar, we grant them the space to unfold. Following a gentle pressing, fermentation takes place variety by variety under strict control, always tailored to the individual needs of each plot. We give the wine the freedom to develop while preserving the freshness and energy it brought with it from the vineyard.

Wood as a quiet companion.

During the aging process, we rely on a delicate touch when working with wood. Depending on their character, our wines rest in large oak casks or small barriques. Our goal is never to overpower the wine with oak aromas, but rather to build structure and finesse. The wood should support the wine, helping it find its own clarity and brilliance—slowly and with respect for its natural rhythm.

From the first pruning in winter to the moment the cork seals the bottle: every single step happens right here at the Untermoserhof. There are no middlemen and no compromises.
